Biscuits and Gravy Breakfast Casserole

Ingredients
  1. 2 cans(16oz) large, flaky biscuits
  2. 1 pound ground breakfast sausage
  3. 4 Tablespoons flour
  4. ½ teaspoon salt
  5. ½ teaspoon black pepper
  6. ½ teaspoon garlic powder
  7. 3 cups milk
  8. 2 Tablespoon melted butter (for brushing on top of finished product)
Instructions
  1. Preheat oven to 400° F. Open cans of biscuits and cut into quarters. Set aside.
  2. Prepare a casserole dish with cooking spray. Either a 9 x 13 or 10 x 12 is recommended. You can use a smaller dish, but you might have some spillage in the oven. Layer half of the quarters in prepared pan.
  3. Bake for 10 minutes.
  4. Next, brown ground sausage oner a medium/high heat until cook through. Reduce heat to medium.
  5. In a small bowl mix together flour, salt, pepper and garlic powder. Sprinkle the cooked sausage with flour mixture. Stir flour mixture into sausage until completely absorbed.
  6. Next, add in milk and stir to combine. Stir frequently until mixture comes to a simmer. Reduce heat to low and continue to simmer and stir until gravy has started to thicken, (about 5 mins).
  7. Pour gravy over your bottom layer of cooked biscuits. Layer the remaining uncooked, biscuit pieces over the gravy. Bake for 15-20 minutes or until biscuits are golden brown.
  8. If you would like, brush 1-2 Tablespoons of melted butter over the tops of the biscuits to give them an inviting shine.

Texas Style Amish Breakfast Casserole

Ingredients
  1. 1 pound sliced bacon, diced
  2. 1 medium sweet onion, chopped
  3. 6 eggs, lightly beaten
  4. 4 cups frozen shredded has brown potatoes, thawed
  5. 2 cups (8 ounces) shredded cheddar cheese
  6. 1-1/2 cups (12 ounces) small-curd cottage cheese
  7. 1-1/4 cups shredded Swiss cheese
  8. 1 4oz can chopped green chilies (The Texas part)
Instructions
  1. In a large skillet, cook bacon and onion until the bacon is crisp; drain. In a bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 9 x 13 baking dish.
  2. Bake, uncovered, at 350 for 35-35 minutes or until set and bubbly. Let stand for 10 minutes before cutting.

Chile Cheese Egg Casserole

Ingredients
  1. 1 stick butter
  2. 10 eggs
  3. 2 egg whites
  4. 1/2 cup flour
  5. 1 tsp baking powder
  6. 2 (8oz) cans diced green chilies
  7. 1 quart (4 cups) cottage cheese
  8. 1/2 cup mascarpone (optional - hard to find)
  9. 1 lb shredded Monterey Jack (Mozzarella works well too)
  10. Salt and pepper, to taste
Instructions
  1. Preheat oven to 400 degrees
  2. Place butter in a 9-by-13-inch baking pan. Place pan in oven until butter is melted. Pour half the butter in a small bowl and set aside.
  3. Beat eggs and egg whites lightly in large bowl. Stir in flour, baking powder, chiles, all cheeses, salt, and pepper. Mix well.
  4. Pour egg mixture into baking pan. Pour reserved butter evenly over the top.
  5. Bake for 15 minutes. Reduce heat to 350°F and bake 35 to 40 minutes or until casserole is set.
